These cans of concentrate are not complete kits. Alexanders concentrates are concentrated to 68 brix. One 96 oz can will reconstitute to 3 gallons of juice with a starting gravity of 1.080-1.090. A 46 oz can will reconstitute back to 1.5 gallons of the same gravity. The beauty of these concentrates is that different grape varieties can be blended. Also, the body of the wine can be controlled by the vintner by varying the amount of concentrate used. See chart below. Alexanders concentrates require the addition of tannin, yeast nutrient, water, wine yeast and pectic enzyme. They may also require acid blend (use acid test kit), sugar and a fining agent. Titrate the whites to 0.60%
