Extra special is a 2 row malt. Color is 120-140 deg Lovibond. Extra special is used to flavor many beer styles. It imparts a burnt sugar, raisiny, woody and pruney notes that pairs well with bock, double bock, stout, mild ale and porters. Also gives a deep red to copper color. For dark beers use 3-5% extra special malt in the grain bill. For porter and stout, try 10-15%.
