Super Tuscan style wine kit Castellina Di Siena with grape skins. This is the latest 18 liter kit that is fermented on grape skins. In the 1970's, the Tuscany winemakers broke with traditions of Chianti making to create the great 'Supertuscan' wines. They concentrated on a single Italian grape, Sangiovese, instead of the usual red and white grapes that go into traditional Chianti and blended it with Cabernet Sauvignon and Merlot. This unique Italian creation has both well-finessed tannins and supple fruit flavors and aromas. The bright cherry and lively fruit of Sangiovese is a brilliant match with the firm structure of Cabernet Sauvignon and the dark fruit of Merlot.
This medium to full-bodied dry wine is dark cherry in color with ruby-garnet highlights. A richly tannic finish follows the big, bold, earthy nose of ultra-ripe cherry and currant fruit. While it is tempting to drink the wine when it is young, the patient winemaker will be rewarded after a year when the lengths of the tannins subside and the ripe cherry and blackcurrant characters mellow and integrate with the oak. Makes 6 US gallons and includes all necessary ingredients.
