Isolated in the Burgundy region, it is a low foaming, moderate speed fermenter that ferments well between 59-86 deg F. It is recommended for red varieties where full extraction is desired. Aromas of ripe berry and fruit are emphasized. One pack is good for 5 gallons of must.
